Cassava Bammy
The cassava the Arawak Indians grew is used today
as "bammy", a flat, round cake mainly eaten with
fried fish.
The cassava is grated, pressed to remove the
juice,
then grilled, fried or steamed.

herring, scallion, hot peppers and other seasonings. Served as an

sour cream and yoghurt dips, pasta sauces, crackers and pizza.
