Cassava Bammy
The cassava the Arawak Indians grew is used today
as "bammy", a flat, round cake mainly eaten with fried fish.
The cassava is grated, pressed to remove the juice,
then grilled, fried or steamed.

 
Solomon Gundy
Solomon Gundy, a Jamaican condiment, is a blended mixture of pickled herring, scallion, hot peppers and other seasonings.  Served as an appetizer, Solomon Gundy is great with
sour cream and yoghurt dips, pasta sauces, crackers and pizza.
